Peanut Butter Oreo Brownies

Ok... so I called these by the wrong name... the actual name of these tasty treats are Triple Layer Cookies and Cream Crunch Bars. I found the recipe over at How Sweet It Is blog, here is the link to her site http://www.howsweeteats.com/. This site is cool and her photos are divine!


I saw this recipe and photos a couple of days ago and I have been tortured ever since then as to when I can make these. Today was the day... I had my mind set that I was making these "brownies" no matter what!


They are simple to make, the hardest part was waiting for them to chill for 2 hours... that was awful! I must admit... I did peek in the fridge a few times just so I could stare at them in anticipation of being able to sample them :)

Triple Layer Cookies and Cream Crunch Bars
makes 9-12 bars

1/2 cup butter, at room temperature
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all purpose flour
1/4 teaspoon salt
3 tablespoons cocoa powder
2 cups chocolate chips
1/2 cup peanut butter
20 Oreo cookies

Preheat oven to 350. Butter and flour an 8 x 8 cake pan.

In the bowl of an electric mixer, cream butter and sugar until fluffy. Add eggs one at a time, then add vanilla. Add in cocoa powder and mix until combined. Add flour and salt, mixing well until batter is smooth and comes together. Fold in 1/2 cup chocolate chips.

Spread in the 8 x 8 pan. Sink 9 Oreo cookies into the batter and press gently. Bake for 25-30 minutes. While baking, crush the remaining Oreos in a ziplock bag. When brownies are finished baking, remove from the oven and sprinkle with 1/2 cup chocolate chips and crushed Oreos. Place back in the oven for about 2-3 minutes. During this time, melt remaining chocolate chips and peanut butter together (about 1 minute in the microwave). Remove brownies from oven and pour melted chocolate mixture over top, spreading with a spatula. Make sure chocolate gets down into the Oreo crevices, as it is the “glue” that holds the bars together. Refrigerate for 2 hours before serving.

Let brownies sit at room temperature for 15 minutes before cutting. Don’t worry if some of the cookies spill out from the middle or the top cracks – they are still delicious!
















Well, Hello Again!

I created this blog over a year ago just to see if I could do it... and I did! I have not paid much attention to it since then and I feel that it is time to "get serious" with this idea I had from way back then.

I will post recipes that inspire me (some tried and some not) along with enticing photos :)

Now, I hope that I do not become an obsessed blogger but you know how random I can be most of the time. My blog does not have a specific theme per say, just neat things that fascinate me - and I want to share with all of you.

How yummy does this look?

I made this cake for a dear friend's birthday. It is chocolate cake with chocolate ganache icing topped off with hand dipped chocolate covered strawberries... YUMM-O!

I love this Blog

I stumbled upon Robyn at You Tube about a year ago... and have been addicted to her blog since! She truly is inspiring and has taught me a lot about my Cricut machine that I never knew existed.
